Couscous with Sardines

I usually prefer to eat hot lunches to counteract the glacial air conditioning in my office. But the overwhelming smell of plastic when I take my Tupperware out of the microwave started to gross me out so I decided to take a break for a few days and make something cold. This dish was quick, reasonably filling, and didn't stink up the office.

2 cups cooked couscous
1/2 cup chopped parsley
1 can olive oil packed sardines, deboned and broken into chunks
1 tsp black pepper
1/2 tsp salt
Zest and juice of one lemon

Combine. Eat. Serves 2.
